Urad Dal (black Lentils) Bada or Urad Dal Vada Recipe
Ingredients:
- 1 cup split black lentils (urad dal)
- 1 small onion, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon ginger, grated
- 1/4 teaspoon asafoetida (hing)
- 1 teaspoon cumin seeds
- A handful of fresh coriander leaves, finely chopped
- Salt to taste
- Oil for deep frying
- Wash the urad dal thoroughly and soak it in water for about 4-5 hours or overnight. Drain the soaked dal before using.
- In a blender or food processor, grind the soaked and drained urad dal to a smooth paste. You can add a small amount of water (about 1-2 tablespoons) while grinding if needed.
- Transfer the ground dal paste to a mixing bowl. Add chopped onions, green chilies, grated ginger, asafoetida, cumin seeds, coriander leaves, and salt. Mix well to combine all the ingredients.
- Heat oil for deep frying in a deep pan or kadai over medium heat. The oil should be hot but not smoking.
- Wet your hands with water to prevent the batter from sticking. Take a small portion of the dal mixture and shape it into a round ball or flat disc shape, similar to a vada or pakora.
- Gently slide the shaped vada into the hot oil. You can fry multiple vadas at a time, depending on the size of your pan, but avoid overcrowding.
- Fry the vadas on medium heat until they turn golden brown and crispy on all sides. Flip them occasionally to ensure even frying.
- Once the vadas are cooked, remove them from the oil using a slotted spoon and drain the excess oil by placing them on a paper towel-lined plate.
- Repeat the process with the remaining batter to make more vadas.
- Serve the hot and crispy vadas as a snack with chutney or sauce of your choice.
