Sfincione, which translates to thick sponge in Italian, is the name of the original Sicilian pizza, which hails from Palermo. The bread on this pizza is often soft and fluffy.

A vegetarian sauce is used to make Sicilian pizza, which is then topped with ingredients like herbs, onions, tomatoes, and anchovies. When baking, a strong cheese with a unique flavour, such as Toma or caciocavallo, is utilised.

Make sure the pizza sauce is free of meat and that the pie is baked at the ideal temperature to create an authentic Sicilian pizza. If a brick wood oven is not available, you can bake it in any ordinary oven.

Sicilian pizza is known for its thick, rectangular crust and hearty toppings. Here's a recipe for a classic Sicilian-style pizza:

Ingredients:

For the dough:
  • 4 cups bread flour
  • 2 teaspoons salt
  • 2 teaspoons sugar
  • 2 ¼ teaspoons active dry yeast
  • 2 tablespoons olive oil
  • 1 ½ cups warm water
For the sauce:
  • 1 can (14 ounces) crushed tomatoes
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
For the toppings:
  • Mozzarella cheese, shredded
  • Grated Parmesan cheese
  • Sliced pepperoni
  • Optional: sliced onions, bell peppers, olives, mushrooms, etc.
Instructions:
  1. In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes until the mixture becomes foamy.
  2. In a large mixing bowl, combine the bread flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
  3. Transfer the dough to a floured surface and knead it for about 8-10 minutes until it becomes smooth and elastic. Form the dough into a ball.
  4. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1-2 hours until it doubles in size.
  5. Preheat your oven to 425°F (220°C).
  6. In the meantime, prepare the sauce by combining the crushed tomatoes, minced garlic, dried oregano, dried basil, salt, and pepper in a bowl. Mix well and set aside.
  7. Once the dough has risen, punch it down to release any air bubbles. Grease a 9x13-inch baking pan with olive oil.
  8. Place the dough into the prepared pan and press it out to fill the pan evenly, stretching it to the edges. If the dough resists stretching, let it rest for a few minutes and then continue.
  9. Spread a generous amount of sauce over the dough, leaving a small border around the edges.
  10. Sprinkle a layer of shredded mozzarella cheese over the sauce, followed by grated Parmesan cheese.
  11. Add your desired toppings, such as pepperoni, sliced onions, bell peppers, olives, mushrooms, etc.
  12. Bake the pizza in the preheated oven for about 20-25 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  13. Remove the pizza from the oven and let it cool for a few minutes before slicing.
  14. Serve the Sicilian pizza in square or rectangular slices.
