Atta dosa is a nutritious and delicious Indian pancake made from whole wheat flour (atta). It's a popular breakfast or snack item in many parts of India. Here's a simple recipe to cook atta dosa:

Ingredients:
  • 1 cup whole wheat flour (atta)
  • 1/4 cup rice flour
  • 2 tablespoons semolina (sooji)
  • 1/4 cup yogurt (curd)
  • 1 small onion, finely chopped
  • 1 green chili, finely chopped
  • 1/2 teaspoon ginger paste
  • 1/4 teaspoon cumin seeds
  • A few curry leaves, chopped (optional)
  • Salt to taste
  • Water, as needed
  • Oil or ghee for cooking
Instructions:
  1. In a large mixing bowl, combine the whole wheat flour, rice flour, semolina, yogurt, chopped onion, green chili, ginger paste, cumin seeds, curry leaves (if using), and salt. Mix well.
  2. Gradually add water to the mixture and whisk it to form a smooth batter. The batter should have a pouring consistency, similar to that of pancake batter. Make sure there are no lumps.
  3. Let the batter rest for about 15-20 minutes. This allows the flavors to blend and the semolina to soften.
  4. After resting, check the consistency of the batter again. If it has thickened, you can add a little more water to adjust it.
  5. Heat a non-stick or cast-iron skillet (tawa) on medium heat. Once the skillet is hot, drizzle a little oil or ghee and spread it evenly.
  6. Pour a ladleful of the atta dosa batter onto the center of the skillet and spread it in a circular motion to form a thin dosa.
  7. Cook the dosa on medium heat until the edges start to turn golden brown and crisp. Drizzle a little oil or ghee on top and around the dosa.
  8. Flip the dosa using a spatula and cook the other side for a minute or two until it becomes golden brown.
  9. Transfer the cooked atta dosa to a plate and serve hot with chutney or sambar.
Repeat the process with the remaining batter to make more dosas. Remember to adjust the heat as needed and add oil or ghee before making each dosa to prevent sticking. Enjoy your homemade atta dosa!
