Atta (wheat flour) Dosa Recipe - Wheat Dosa Recipe
Ingredients:
- 1 cup whole wheat flour (atta)
- 1/4 cup rice flour
- 2 tablespoons semolina (sooji)
- 1/4 cup yogurt (curd)
- 1 small onion, finely chopped
- 1 green chili, finely chopped
- 1/2 teaspoon ginger paste
- 1/4 teaspoon cumin seeds
- A few curry leaves, chopped (optional)
- Salt to taste
- Water, as needed
- Oil or ghee for cooking
- In a large mixing bowl, combine the whole wheat flour, rice flour, semolina, yogurt, chopped onion, green chili, ginger paste, cumin seeds, curry leaves (if using), and salt. Mix well.
- Gradually add water to the mixture and whisk it to form a smooth batter. The batter should have a pouring consistency, similar to that of pancake batter. Make sure there are no lumps.
- Let the batter rest for about 15-20 minutes. This allows the flavors to blend and the semolina to soften.
- After resting, check the consistency of the batter again. If it has thickened, you can add a little more water to adjust it.
- Heat a non-stick or cast-iron skillet (tawa) on medium heat. Once the skillet is hot, drizzle a little oil or ghee and spread it evenly.
- Pour a ladleful of the atta dosa batter onto the center of the skillet and spread it in a circular motion to form a thin dosa.
- Cook the dosa on medium heat until the edges start to turn golden brown and crisp. Drizzle a little oil or ghee on top and around the dosa.
- Flip the dosa using a spatula and cook the other side for a minute or two until it becomes golden brown.
- Transfer the cooked atta dosa to a plate and serve hot with chutney or sambar.
