Vegetable Roll or Veg Roll Recipe
Ingredients:
For the filling:
- 1 cup mixed vegetables (carrots, bell peppers, cabbage, beans, etc.), finely chopped or grated
- 1 small onion, finely chopped
- 1 green chili, finely chopped (adjust according to spice preference)
- 1/2 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- 1 tablespoon oil
- 4-6 flatbreads (such as tortillas, roti, or paratha)
- Sliced onions
- Sliced tomatoes
- Shredded lettuce or cabbage
- Mayonnaise or yogurt sauce
- Hot sauce or ketchup (optional)
For the filling:
- Heat oil in a pan over medium heat. Add chopped onions and green chili. Sauté until the onions turn translucent.
- Add ginger-garlic paste to the pan and sauté for a minute until fragrant.
- Add the mixed vegetables to the pan and stir-fry for a few minutes until they are slightly cooked but still retain their crunch.
- Add turmeric powder, cumin powder, coriander powder, garam masala, and salt to the pan. Mix well to coat the vegetables with the spices.
- Cook the vegetable filling on medium heat until they are cooked through but not mushy. Stir occasionally to prevent sticking.
- Once the vegetables are cooked, remove from heat and set aside.
- Warm the flatbreads on a griddle or in a microwave for a few seconds to make them soft and pliable.
- Spread a thin layer of mayonnaise or yogurt sauce on one side of the flatbread.
- Place a portion of the vegetable filling on the flatbread, towards one end.
- Add sliced onions, tomatoes, and shredded lettuce or cabbage on top of the vegetable filling.
- Drizzle some hot sauce or ketchup, if desired, for added flavor.
- Roll the flatbread tightly from one end to form a roll, tucking in the sides as you go.
- Repeat the process with the remaining flatbreads and fillings.
- Cut the veg rolls diagonally into halves or leave them whole.
- Serve the veg rolls immediately as a delicious and wholesome snack or light meal.
