To make egg rolls, you will need the following ingredients and Instructions:

Ingredients:
  • Egg roll wrappers (available at most grocery stores)
  • 1 cup cooked and shredded chicken, pork, or shrimp (optional)
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 1/2 cup sliced mushrooms (optional)
  • 1/2 cup chopped green onions
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Cooking oil for frying
  • Water (for sealing the wrappers)
Instructions:
  1. In a large skillet or wok, heat some cooking oil over medium-high heat.
  2. Add the minced garlic and chopped green onions to the skillet, and sauté for about a minute until fragrant.
  3. If you're using meat or shrimp, add it to the skillet and cook until it's no longer pink or translucent. If you're making vegetarian egg rolls, skip this step.
  4. Add the shredded cabbage, carrots, and mushrooms to the skillet. Stir-fry for a few minutes until the vegetables are slightly softened.
  5. Add the soy sauce, oyster sauce (if using), sesame oil, salt, and pepper to the skillet. Stir everything together and cook for another minute or two. Taste the filling and adjust the seasoning if needed.
  6. Remove the skillet from heat and let the filling cool down before assembling the egg rolls.
  7. Take an egg roll wrapper and place it on a clean surface. Position it as a diamond shape, with one corner facing you.
  8. Spoon a couple of tablespoons of the filling onto the wrapper, slightly below the center.
  9. Fold the corner closest to you over the filling, and then fold the left and right corners toward the center.
  10. Dip your fingers in water and moisten the edges of the remaining top corner. Roll the egg roll away from you, tucking in the filling as you go. The moistened edge will seal the egg roll.
  11. Repeat the process with the remaining egg roll wrappers and filling.
  12. Heat oil in a deep pan or a deep fryer to about 350°F (175°C). Make sure there is enough oil to fully submerge the egg rolls.
  13. Carefully place a few egg rolls in the hot oil, seam side down, and fry them for 2-3 minutes on each side until they turn golden brown.
  14. Once the egg rolls are cooked, remove them from the oil and place them on a paper towel-lined plate to drain excess oil.
  15. Repeat the frying process with the remaining egg rolls.
  16. Allow the egg rolls to cool slightly before serving. You can serve them with sweet and sour sauce, soy sauce, or any other dipping sauce of your choice.
