To make chili garlic chutney, you'll need a combination of spicy red chilies and garlic, along with a few other ingredients. Here's a simple recipe to guide you:

Ingredients:
  • 10-12 dried red chilies (adjust quantity based on desired spiciness)
  • 6-8 garlic cloves
  • 2 tablespoons oil
  • 1 tablespoon tamarind pulp (or tamarind paste)
  • 1 tablespoon vinegar
  • 1 teaspoon sugar (optional)
  • Salt to taste
Instructions:
  1. Soak the dried red chilies in warm water for about 15 minutes to soften them.
  2. Drain the water from the chilies and remove the stems.
  3. In a blender or food processor, add the soaked red chilies, garlic cloves, tamarind pulp, vinegar, sugar (if using), and salt.
  4. Blend the ingredients until you achieve a smooth paste. If needed, you can add a little water to adjust the consistency.
  5. Heat oil in a pan over medium heat.
  6. Add the chili-garlic paste to the pan and cook for a few minutes, stirring continuously.
  7. Cook until the oil starts to separate from the chutney and the raw smell of garlic fades away.
  8. Remove the pan from heat and let the chutney cool down.
  9. Transfer the chili garlic chutney to a clean container or jar.
Store the chutney in the refrigerator for up to a week.

Chili garlic chutney is a versatile condiment that can be enjoyed with various snacks, sandwiches, or used as a dip. Adjust the quantity of red chilies according to your preferred level of spiciness. Enjoy the spicy and flavorful chili garlic chutney!
