Pui Shak, also known as Malabar Spinach or Vine Spinach, is a leafy green vegetable commonly used in Asian cuisine. Here's a simple recipe to cook Pui Shak:

Ingredients:
  • 1 bunch of Pui Shak (Malabar Spinach/Vine Spinach)
  • 2 tablespoons oil (preferably mustard oil)
  • 1 teaspoon cumin seeds
  • 2-3 cloves of garlic, minced
  • 1 small onion, finely chopped
  • 1-2 green chilies, slit lengthwise (adjust according to your spice preference)
  • Salt to taste
Instructions:
  1. Wash the Pui Shak thoroughly under running water to remove any dirt or impurities. Trim off the ends of the stems if they are tough.
  2. Heat oil in a pan or kadai over medium heat.
  3. Add cumin seeds to the hot oil and let them splutter.
  4. Add minced garlic to the pan and sauté for a minute or until it turns golden brown.
  5. Add the chopped onions and slit green chilies to the pan. Sauté until the onions become translucent.
  6. Now, add the Pui Shak leaves to the pan. Stir well to coat the leaves with the oil and spices.
  7. Cook the leaves uncovered for about 5-7 minutes, stirring occasionally. The leaves will wilt and reduce in volume as they cook.
  8. Sprinkle salt over the leaves and mix well. Adjust the salt according to your taste.
  9. Continue cooking for another 2-3 minutes or until the leaves are tender and cooked through.
  10. Once the Pui Shak is cooked, remove the pan from the heat.
  11. Transfer the cooked Pui Shak to a serving dish and serve hot as a side dish with rice or roti.
Note: You can enhance the flavor of Pui Shak by adding grated coconut or a squeeze of lemon juice at the end. You can also add a pinch of turmeric powder and red chili powder while cooking for added flavor and color. Additionally, feel free to customize the recipe by adding your favorite spices and ingredients to suit your taste preferences.
