Malabar Spinach with Sweet Pumpkin Recipe
Pui Shak, also known as Malabar Spinach or Vine Spinach, is a leafy green vegetable commonly used in Asian cuisine.
Ingredients:
- 1 bunch of Pui Shak (Malabar Spinach/Vine Spinach)
- 2 cups sweet pumpkin, peeled and cubed
- 2 tablespoons oil (preferably mustard oil)
- 1 teaspoon cumin seeds
- 2-3 cloves of garlic, minced
- 1 small onion, finely chopped
- 1-2 green chilies, slit lengthwise (adjust according to your spice preference)
- 1/2 teaspoon turmeric powder
- Salt to taste
- Wash the Pui Shak thoroughly under running water to remove any dirt or impurities. Trim off the ends of the stems if they are tough. Separate the leaves from the stems and roughly chop them.
- Heat oil in a pan or kadai over medium heat.
- Add cumin seeds to the hot oil and let them splutter.
- Add minced garlic to the pan and sauté for a minute or until it turns golden brown.
- Add the chopped onions and slit green chilies to the pan. Sauté until the onions become translucent.
- Add the cubed sweet pumpkin to the pan and stir well to coat the pumpkin with the oil and spices.
- Sprinkle turmeric powder and salt over the pumpkin. Mix well to evenly distribute the spices.
- Cover the pan and cook the pumpkin over medium-low heat for about 10-15 minutes or until it becomes tender. Stir occasionally to prevent sticking or burning.
- Once the pumpkin is cooked, add the chopped Pui Shak leaves to the pan. Stir well to combine with the pumpkin.
- Cover the pan again and cook for another 5-7 minutes or until the Pui Shak leaves wilt and become tender.
- Remove the pan from the heat.
- Transfer the Pui Shak with Sweet Pumpkin to a serving dish and serve hot as a side dish with rice or roti.
