Simple Fried Rice Recipe
Ingredients:
- 2 cups cooked rice (preferably leftover rice)
- 1 cup mixed vegetables (carrots, peas, bell peppers, corn, etc.), finely chopped
- 1 small onion, finely chopped
- 2-3 cloves of garlic, minced
- 2 eggs, beaten
- 2 tablespoons oil
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce (optional)
- Salt and pepper to taste
- Spring onions or cilantro for garnish (optional)
- Heat oil in a large pan or wok over medium heat.
- Add the minced garlic and chopped onions to the pan. Sauté until the onions become translucent and the garlic becomes fragrant.
- Push the onions and garlic to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs and cook until they are lightly set.
- Add the chopped mixed vegetables to the pan and stir-fry for a few minutes until they are slightly cooked but still retain their crunch.
- Add the cooked rice to the pan. Break up any clumps of rice with a spatula and mix it well with the vegetables, onions, and eggs.
- Drizzle soy sauce and oyster sauce (if using) over the rice. Stir-fry everything together, ensuring that the rice is evenly coated with the sauces.
- Season with salt and pepper to taste. Be cautious with the salt as soy sauce is already salty.
- Continue to stir-fry the rice mixture for a few more minutes until everything is well combined and heated through.
- Taste and adjust the seasoning or sauce according to your preference.
- Once the fried rice is ready, remove it from heat.
- Garnish with chopped spring onions or cilantro, if desired, for added freshness and flavor.
- Serve the fried rice hot as a main course or as a side dish alongside your favorite Chinese or Asian-inspired dishes.
