To make idli, you will need the following ingredients:

  • 2 cups of idli rice (parboiled rice)
  • 1 cup of urad dal (split black gram)
  • 1 teaspoon fenugreek seeds (methi seeds)
  • Salt to taste
  • Water (for soaking and grinding)
  • Cooking oil or ghee (for greasing)
Here's a step-by-step guide to making idli:
  1. Wash the idli rice, urad dal, and fenugreek seeds separately and soak them in water. The rice and dal should be soaked for at least 4-6 hours. The fenugreek seeds can be soaked along with the urad dal.
  2. After soaking, drain the water from the rice and dal. Keep the water aside as you may need it later during the grinding process.
  3. Grind the urad dal and fenugreek seeds together in a wet grinder or a high-powered blender. Add some water gradually while grinding to make a smooth batter. The consistency of the batter should be thick and fluffy. It should be light and airy when you mix it with your hand.
  4. Transfer the urad dal batter into a large bowl.
  5. Now, grind the soaked rice in the same wet grinder or blender. Add water gradually as needed to make a smooth batter. The consistency of the rice batter should be slightly coarse compared to the urad dal batter.
  6. Mix the rice batter with the urad dal batter in the large bowl. Add salt to taste and mix well. The salt will help in fermentation.
  7. Cover the bowl with a clean cloth or lid and allow the batter to ferment overnight or for at least 8-10 hours. Place the bowl in a warm place, like inside the oven (turned off), to aid the fermentation process. The batter will rise and become frothy.
  8. After fermentation, gently mix the batter to incorporate the air bubbles.
  9. Grease the idli plates or molds with cooking oil or ghee.
  10. Pour the batter into the idli plates, filling each mold about 3/4th full. This allows room for the idlis to rise.
  11. Place the idli plates in a steamer or idli cooker. Steam the idlis for about 10-15 minutes on medium heat or until a toothpick inserted into the center of an idli comes out clean.
  12. Once cooked, remove the idli plates from the steamer and let them cool for a minute or two.
  13. Using a spoon or a wet spatula, gently remove the idlis from the molds. They should come out easily without sticking.
Serve the idlis hot with sambar (lentil soup), coconut chutney, or any other side dish of your choice.
