How to make Soft Rice Idli - South Indian Dish Idli Recipe
Ingredients:
- 2 cups of idli rice (parboiled rice)
- 1 cup of urad dal (split black gram)
- 1 teaspoon fenugreek seeds (methi seeds)
- Salt to taste
- Water (for soaking and grinding)
- Cooking oil or ghee (for greasing)
- Wash the idli rice, urad dal, and fenugreek seeds separately and soak them in water. The rice and dal should be soaked for at least 4-6 hours. The fenugreek seeds can be soaked along with the urad dal.
- After soaking, drain the water from the rice and dal. Keep the water aside as you may need it later during the grinding process.
- Grind the urad dal and fenugreek seeds together in a wet grinder or a high-powered blender. Add some water gradually while grinding to make a smooth batter. The consistency of the batter should be thick and fluffy. It should be light and airy when you mix it with your hand.
- Transfer the urad dal batter into a large bowl.
- Now, grind the soaked rice in the same wet grinder or blender. Add water gradually as needed to make a smooth batter. The consistency of the rice batter should be slightly coarse compared to the urad dal batter.
- Mix the rice batter with the urad dal batter in the large bowl. Add salt to taste and mix well. The salt will help in fermentation.
- Cover the bowl with a clean cloth or lid and allow the batter to ferment overnight or for at least 8-10 hours. Place the bowl in a warm place, like inside the oven (turned off), to aid the fermentation process. The batter will rise and become frothy.
- After fermentation, gently mix the batter to incorporate the air bubbles.
- Grease the idli plates or molds with cooking oil or ghee.
- Pour the batter into the idli plates, filling each mold about 3/4th full. This allows room for the idlis to rise.
- Place the idli plates in a steamer or idli cooker. Steam the idlis for about 10-15 minutes on medium heat or until a toothpick inserted into the center of an idli comes out clean.
- Once cooked, remove the idli plates from the steamer and let them cool for a minute or two.
- Using a spoon or a wet spatula, gently remove the idlis from the molds. They should come out easily without sticking.
