Plain Dosa is the most typical type of dosa. It is simple and quick to prepare at home. This dosa has a crisp outside and a delicate within. Dosas are often made either thinly or thickly.

To cook plain dosa, you will need a batter made from rice and urad dal (split black gram). 

Here's a step-by-step guide to making plain dosa:

Ingredients:
  • 1 cup rice (preferably parboiled rice)
  • 1/4 cup urad dal (split black gram)
  • Salt to taste
  • Water (for soaking and grinding)
  • Oil (for cooking)
Instructions:
  1. Soaking: Wash the rice and urad dal separately and soak them in water for at least 4-6 hours. You can also soak them overnight for convenience.
  2. Grinding: After soaking, drain the water from the rice and urad dal. In a blender or wet grinder, grind the rice and urad dal separately with a little water. Grind them to a smooth consistency. The urad dal should be fluffy and light, while the rice should be finely ground.
  3. Mixing: In a large bowl, combine the ground rice and urad dal batter together. Add salt to taste and mix well. The consistency should be similar to pancake batter. If the batter is too thick, you can add a little water to adjust the consistency.
  4. Fermentation: Cover the bowl with a clean cloth or plastic wrap and let the batter ferment for about 8-10 hours or overnight. Place it in a warm place, like an oven with the light turned on or on the countertop during warmer weather. Fermentation helps in creating a tangy flavor and airy texture in the dosas.
  5. Preparing the griddle: Heat a non-stick dosa tawa (griddle) or a flat pan on medium heat. Sprinkle a few drops of water on the tawa to check if it's hot enough. If the water sizzles and evaporates immediately, the tawa is ready.
  6. Spreading the batter: Take a ladleful of the dosa batter and pour it in the center of the tawa. Using the back of the ladle, spread the batter in a circular motion to form a thin, round dosa. Start from the center and work your way outwards.
  7. Drizzling oil: Once the dosa is spread thin, drizzle a little oil around the edges and on the surface of the dosa. This will make it crisp and golden.
  8. Cooking: Cook the dosa on medium heat until the bottom turns golden brown and crisp. Flip it over and cook the other side for a minute or so. You can adjust the cooking time based on how crispy you like your dosa.
  9. Serving: Remove the dosa from the tawa and serve it hot with coconut chutney, sambar, or any other accompaniment of your choice.
  10. Repeat: Repeat the process with the remaining batter, making more dosas as needed.
